Water is not very compressible and because fish are not made of gas, they won't explode if suddenly depressurized. What kills them is the temperature. The deep sea is about 28 degrees and the fish have adapted to these conditions. As the temperature goes up, the levels of Oxygen decrease and deep sea fish suffocate at the surface. The loss of pressure softens their bodies substantially. Their skin almost appears to be made of gelatin. Under tons of pressure, they have much firmer bodies.
